Ingredients:
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 3 eggs
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 2 cups grated zucchini
- 2 tsp vanilla extrac
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, combine the flour, salt, baking powder, baking soda, and cinnamon. Set aside.
- In a large mixing bowl, beat the eggs, granulated sugar, brown sugar, oil, grated zucchini, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
